Ingredients
1 pkg Wildtree Fabulous Garlic Flatbread, prepared according to directions
1 boneless, skinless chicken breast
4 T Wildtree Basil Pesto Sauce, separated
Dash of Wildtree Rancher Steak Rub
5 -7 pieces of broccolini, stems removed
5 pieces sun dried tomatoes, chopped
1/2 C cremini mushrooms
1/2 C crumbled feta cheese
Wildtree Roasted Garlic Grapeseed Oil
Heat oven to 400 degrees. Flatten chicken breast with a meat tenderizer (using the flat side, if available). This will ensure quick and easy cooking. Sprinkle with Wildtree's Rancher Steak Rub. Drizzle Wildtree Roasted Garlic Grapeseed Oil over a small pan and heat to medium high. Cook 2-3 minutes on each side. The chicken does not have to be cooked all the way through (there is more cooking to come). :-)
Once cooked, dice the chicken and set aside.
Chop sun dried tomatoes. Set aside.
Place diced chicken, sun dried tomatoes, broccolini, mushrooms back in the frying pan. Add 2 T Wildtree Basil Pesto Sauce and cook over medium-high heat. Cook for roughly 2 minutes. Remove from heat.
Prepare Wildtree Fabulous Garlic Flatbread according to package directions.
Place both pieces on a pizza stone or a baking sheet. Spread 1 T of Wildtree Basil Pesto Sauce to each flatbread (you'll use 2 T total). Top with chicken and vegetable mixture. Add crumbled feta cheese.
Bake at 400 degrees for 11-12 minutes.
